NV Sparkling Rosé
Tasting Notes
A lively, pale salmon hue in the glass, this sparkling rosé opens with aromas of wild strawberries,
Rainier cherry, and a hint of rose petal. On the palate, crisp red berry flavors mingle with notes of
white peach, citrus zest, and a subtle brioche undertone from extended lees aging. The mousse is
fine and persistent, leading to a refreshing, balanced finish with a touch of creamy richness.
Winemaking
Crafted in the traditional Méthode Champenoise, this sparkling rosé began with a careful selection
of Pinot Noir and Merlot from the Columbia Valley. After gentle pressing and primary fermentation,
the base wine was blended and bottled for secondary fermentation, spending 20 months en tirage
to develop complexity and fine mousse. Upon disgorgement, a 16 g/L dosage was added to
balance the wine’s vibrant acidity and enhance its fruit character
The label features a whimsical portrait of Cooper, Andrea Dahlman’s mom’s beloved dog, sharing a
moment with Andrea’s mom as she enjoys a glass of rosé at a French bistro. This playful scene
captures the spirit of celebration and companionship that this sparkling wine is meant to inspire.
Food Pairing
This versatile sparkling rosé shines alongside a variety of dishes. Enjoy it with smoked salmon
tartines, fresh goat cheese, or a classic Niçoise salad. It also pairs beautifully with fried chicken, sushi,
potato chips, or a simple bowl of summer berries. For a playful touch, try it with French bistro fare—
think quiche Lorraine or a croque monsieur (grilled ham and cheese sandwich).
