Tasting Notes
This Merlot opens with inviting aromas of black cherry, plum, and a hint of vanilla. On the
palate, it offers a rich and velvety texture with flavors of dark berries, chocolate, and a touch
of spice from the oak aging. The finish is long and smooth, showcasing the wine's balanced
acidity and well-integrated tannins.
Winemaking
This is our second vintage of Merlot from the Andrew’s family’s Coyote Canyon vineyard. All
the fruit comes from the same block that was planted in 2006. This is also one of the first
wines that we produced in our Eastern Washington facility, Trothe Winery, which is across the
street from Coyote Canyon. Aged for 22 months in 25% new Hungarian oak that provides a
brown sugar finish, which enhances the spiciness of the 15% new French oak.
Food Pairing
Dahlman Cellars Merlot’s smooth tannins and rich fruit flavors complement roasted lamb,
enhancing the meat’s richness. Turkey, particularly alongside cranberry sauce, the Merlot's
soft profile adds balance. For pasta Bolognese, the wine’s earthy tones blend perfectly with
the tomato and meat sauce. Our Merlot pairs best with medium to hard cheese varieties like
Gouda and Cheddar, as well as the saltiness of blue cheese for contrast.
