Tasting Notes
This Cabernet Sauvignon is a great example of both elegance and structure. The wine opens
with inviting aromas of blackberry, cassis, and dark plum, layered with just a touch of cedar
and baking spice. On the palate, it is medium-bodied and opulent, with fine-grained tannins
and a harmonious balance of fruit and minimal oak influence. Rich flavors of black cherry,
chocolate, and a hint of tobacco linger on the long, satisfying finish.
Winemaking
While not our first Cabernet Sauvignon, it is our first from the Andrew’s family’s Coyote
Canyon vineyard. All the fruit comes from the same block that was planted in 2003. This is
also one of the first wines that we produced in our Eastern Washington facility, Trothe Winery,
which is across the street from Coyote Canyon. Aged for 22 months in mostly neutral French
oak barrels, we did include a small amount of new oak to enhance the structure and
complexity.
Food Pairing
The Coyote Canyon Cabernet Sauvignon pairs beautifully with bold and rich foods like grilled
ribeye steak or lamb chops with rosemary, which match the wine's tannins and savory notes.
For a sweet finish, dark chocolate desserts enhance the wine’s cherry and chocolate flavors,
while aged cheddar or gouda provide a perfect counterpoint to its structure.
