Tasting Notes
The Merlot really takes the lead here, giving you those big, juicy flavors of red plum and ripe raspberries. The Cabernet steps in right behind it, adding a layer of dark currant and a hint of green peppercorn that keeps things interesting. It’s got a soft, velvety feel in the mouth, but there’s just enough structure from the Cab to keep it from feeling lazy. It’s straightforward, fruit-forward, and finishes with a nice, easy smoothness.
Winemaking
The wine is a beautifully balanced blend of 74% Merlot, and 24% Cabernet Sauvignon, sourced from Elerding Vineyard in Prosser, Mattawa Vineyard (now Charlotte’s Ridge) in Mattawa, and Stanton Vineyard on Red Mountain. Aged in mostly neutral French oak barrels, this wine showcases a harmonious integration of fruit, structure, and subtle oak influence. Additionally, Dahlman Cellars donates 10% of the profits from this wine to a woman in technology scholarship at Stadium High School.
Food Pairing
This is a versatile bottle that’s happy with just about anything coming out of the kitchen. It’s killer with a classic meatloaf, roasted chicken, or a big bowl of spaghetti and meatballs. If you’re hanging out by the fire, it’s great with some simple sliders or even a grilled cheese sandwich with some sharp provolone. It’s a "crowd-pleaser" in the best way possible—honest wine for honest food.
